Seas The Day!

With 175 miles of Aberdeenshire coastline around the shoulder of the north east of Scotland, it’s no wonder our chefs have focussed on seafood for our summer 2021 menu. We’ve got unrivalled access to some of the highest quality seafood and shellfish and all of it locally, responsibly and sustainably sourced.

Nothing tastes of summer more than an abundance of fresh seafood simply cooked and this seasons’ Chester Hotel bar menu serves up summer-perfect seafood from seared salmon to lavish lobsters.

So, roll on languid summer days, channel the coastal life and check out our delicate and light pescatarian delights.

Scrumptious Salmon

Poached, seared, smoked or tandooried – we do salmon all ways this summer.

The season’s starter include Chester hot seared hot smoked salmon is smoked to our own recipe and served along with a tomato salsa all prepared freshly in our own kitchen.

Or, if you want to spice it up, how about tandoori salmon, prepared in our very own tandoor oven at temperatures of 300 - 400 degrees.

It wouldn’t be summer without some great salad options and our poached salmon Russian potato salad is sure to be a winner on warmer days – especially with a glass of chilled white. Did you know that the Russian salad – or the Olivier salad to give its original name – was a secret recipe invented by a Belgian chef who opened a restaurant in Moscow in the 1860s?

Sensational Scallops

Scallops are a perennial favourite at The Chester. This summer’s starters include tandoori king scallop served with cauliflower wing, raisins and curry dressing. The scallops are hand dived from Orkney and the cauliflower is from Crofts Farm at Carmyllie by Arbroath – the best of the land and the sea. We expect this to become one of the most popular dishes on the menu this season.

Classic Crab

And, making an appearance on the menu for spring and summer we have king prawn and crab served on a crumpet along with fried capers and Manchego cheese. The Manchego may come from sheep in central Spain but the prawn and crab are from much closer to home being fished off the east coast of Scotland.

Winning Wild Sea Bass

Wild sea bass is always an elegant choice and our summer menu features this delicately flavoured fish. It channels the coastal life with brown shrimps, samphire and capers along with seasonal Jersey Royals.

Luscious Lobsters and Luxurious langoustines

Although not featuring on the daily menu, watch out for regular specials of these Chester favourites. A glass of our perfectly chilled Belstar Prosecco is the perfect accompaniment in our opinion.

Perpetual Preference!

Don’t panic fish lovers – we know you haven’t haddock enough of The Chester fish and chips which remain on the menu. And, for summer you can substitute the chips with sweet potato fries for an extra splash of summer colour on your plate.

If you need any further reason to choose the dish with the fish, according to the NHS:

  • We should all eat at least two portions of fish a week
  • White fish and shellfish is low in fat
  • Oily fish – including salmon – are high in long chain omega-3 fatty acids which may prevent heart disease and are a good source of vitamin D
  • Some white fish- like sea bass - is a source of omega-3 fatty acids
  • Shellfish is a source of selenium, zinc, iodine and copper
